This was a quick 80lb Bluefin Tuna we cut up from a local fisherman here in Southern California. We get these on very little notice. Since this was a smaller fish, we had the main skeleton of the fish on display at our sushi bar afterwards where we could scrape fresh tuna scraps for our customers directly. We acquired a new toy! We tested out the 17 inch Tuna Slicing Knife from Dalstrong! Definitely fun to work with. We will look into other knives as well. As usual, we cut up the slabs and then scrape the bones. And then we chop up the spinal column and drink the spinal fluid followed by some sake.
