This was a big one! This 282lb Bluefin Tuna came in from a local fisherman here in Southern California. It was a tad too big for our little cutting station. We need a bigger table! And we need stronger sushi chefs! We scraped the bones afterwards and then served the spinal columns to our few lucky, loyal customers who come in the day of the cutting.
