80lb Bluefin Tuna Cutting - 2023 07 14

This was a quick 80lb Bluefin Tuna we cut up from a local fisherman here in Southern California. We get these on very little notice. Since this was a smaller fish, we had the main skeleton of the fish on display at our sushi bar afterwards where we could scrape fresh tuna scraps for our customers directly.
