We acquired a new toy! We tested out the 17 inch Tuna Slicing Knife from Dalstrong! Definitely fun to work with. We will look into other knives as well. As usual, we cut up the slabs and then scrape the bones. And then we chop up the spinal column and drink the spinal fluid followed by some sake.
