205lb Bluefin Tuna Cutting - 2024 01 23
This is the 2nd whole Bluefin Tuna of 2024 and it was a beauty! 205lbs and it had some very good Toro. We've been running out of Bluefin rather quickly so we had to get one that was a little heavier. We were able to cut this up front so that those who were in the restaurant could watch and get first dibs. It had beautiful Toro, which we love shooting because we get to eat it. We scraped the bones afterwards and then served the spinal columns to our few lucky, loyal customers who come in the day of the cutting.
