This was the first Bluefin Tuna we got for 2024 and it was a beauty! For the last two tunas, we have been cutting it up front in the restaurant. It's a little more difficult for our sushi chef but we think it's worth it for our customers who decide to come by for the cutting. It had beautiful Toro, which we love shooting because we get to eat it. We scraped the bones afterwards and then served the spinal columns to our few lucky, loyal customers who come in the day of the cutting.
